COconut French toast

Ingredients

4 slices of your favorite vegan bread (e.g., whole wheat, sourdough)

1/2 cup coconut milk

2 tsp nutritional yeast

1 tsp agave nectar
-
2 Tbsp coconut flakes (for garnish)

1 tsp tapioca flour (or cassava flour)

Pinch of salt

Cooking oil (for frying)

1 cup mixed berries (strawberries, blueberries, raspberries) for garnish
Instructions

In a mixing bowl, combine the coconut milk, nutritional yeast, agave nectar, tapioca flour, and a pinch of salt. Whisk well until the mixture is smooth and well combined.

Dip each slice of bread into the coconut milk mixture, making sure both sides are coated evenly. Allow the bread to soak for a few seconds on each side.

In a non-stick skillet, heat a small amount of cooking oil over medium heat.

Carefully transfer the soaked bread slices to the skillet and cook until golden brown on each side, about 3-4 minutes per side.

While the French toast is cooking, toast 2 tablespoons of coconut flakes in a dry pan until they turn golden and fragrant. Set aside for garnish.

Once the French toast slices are cooked to your desired level of crispiness, remove them from the skillet and place them on serving plates.

Garnish the French toast with the toasted coconut flakes and a generous portion of mixed berries.

Drizzle additional agave nectar over the top if desired for extra sweetness.
