Homemade Seitan

Serves: 6-8 hungry people
Ingredients

2 cups vital wheat gluten

2 Tbsp. All Purpose Flour

1/4 Cup Nutritional Yeast
-
1 1/2 Cup filtered water
-
1/2 Cup liquid amino acid (soy sauce replacer)

2 Chopped Cloves
-
1Tbsp. Tomato Paste
-
1 Tbsp. Olive Oil
-
1 lemon zest (Finely Zest)
Stock Ingredients

10 cups of filtered water
-
1/3 cup of Amino Acids
Instruction

Add vital wheat gluten, Nutritional Yeast, and Flour to an automatic mixer or mixing bowl, Mix until completely blended.

In a separate bowl, hand mixes all other ingredients until blended well.

Then add the wet ingredients to the dry and set mixer on low for 5 minutes or hand mix until a thick ball is created.
NOW, THIS IS WHEN YOU NEED TO BE CAREFUL!

Boil the Stock and before you add in the Seitan the stock MUST NOT be bowling,

Put the temperature on a low simmer and WAIT until it has stopped bowling before adding the Seitan to avoid evaporation of the liquid, giving your Seitan an unwanted spongy texture.

After slicing the Seitan into 6 even slices and placing it in the NON-bowling stock put the lid on and walk away for 1 hour.
THIS PART IS ALSO VERY CRUCIAL

THE STOCK MUST BE COMPLETELY COOLED DOWN BEFORE THE SEITAN CAN BE REMOVED.

(Add ice if you are in a hurry, but do NOT remove it when the stock is still hot.
Storage
Store inside the broth juice, in a lidded container in the fridge for up to 2 weeks
