Jackfruit Carnitas Tacos

 

Vegan Mexican food?!

That's right, as a little boy I would have this Carnitas every week and I was happy to find this amazing fruit that not only looks but also taste and shreds like the original one my Abuela would make for me. And now we're sharing our all Vegan Style Carnitas recipe with you. Same flavor with a Vegan Gents Twist!

 

 

Prep Time: 10 mins

Cook Time: 15-20 mins

Total cook time: 30 mins

Serves: 8-10 hungry people 

Ingredients

 

  • 1 can or 16 oz. of YOUNG Jackfruit

  • 2 Tbsp. of Taco Seasonings

  • 1 Tbsp. of Coconut Oil

  • 1/4 of a White Onion chopped long and into skinny strips   

Assembling The Tacos

  1. Prep the jackfruit by washing it in cold water and smashing the jackfruit with a fork, using only the triangular portions that are softer

  2. Heat the coconut oil in a pan over medium heat once

    the oil is heated add the onions to the pan. Let them cook until the onion softens slightly

  3. Add the jackfruit to the pan

  4. Add 1 Tbsp. of taco seasonings mix in well and let cook for 5 mins

  5. Add the other tablespoon of taco seasonings and allow to thoroughly coat the jackfruit and cook for another 5 mins

  6. Remove from heat and assemble your tacos. for authenticity use corn tortillas, top with cilantro, chopped tomatoes and lime juice for optimum flavor

 

 

Serve on corn tortillas and enjoy!!!
