Smoked Paprika Mozzarella

Ingredients

Soaked Cashews: 1/2 Cup (Soak for 4-8 hour or boil for 15 minutes)

Water: 1 Cup

Tapioca Flour: 3 Tbsp.

Garlic: 2 Cloves or 1 Tbsp. of Powder

Coconut Oil Melted: 2 Tbsp.

Lemon Juice: 1 Tbsp. (THE JUICE OF 1/2 A LEMON)

Apple Cider Vinegar: 1 Tbsp.

Nutritional Yeast: 2 Tbsp.
-
Kosher Salt and Black Pepper: Pinch Each

1 Tbsp. of Paprika for Outside Coating

Activating The Agar Agar (Agar comes in 3 forms, Powder, Flakes and Strips)

6 Tbsp. Agar flakes or 1/3 cup of hand-cut Agar Strips or 2 Teaspoon of powder To a 1/2 cup of water

If using flakes, begin the boiling process (Step 5)

If using Agar strips, cut into smaller pieces and soak in cold water for 15 minutes to rehydrate and fully dissolve, then begin the boiling process

If using powder, add to the pot in COLD water, stir to dissolve, once completely dissolved, bring to a boil.

Bring to a boil then let simmer for 3-5 minutes until a gel texture is achieved
Instructions

Add all the ingredients (except the Agar Agar) to the blender and blend for 1 minute on high
-
Add in the Agar Agar and blend for 15 seconds
-
Coat the Molding container with a little oil then sprinkle on the Paprika before adding the cheese
-
Pour the cheese into the molds and place in the fridge for 4 hours or overnight, this will ensure a solid texture is achieved making your cheese sliceable and shreddable
Storage
Store in refrigerator in a sealed container for up to 7 days

Quick Soak method: In a 3 qt. pot boil the Raw Cashews in water for 15 minutes

Long soaking method: Soak Raw Cashews in water to fill for 4-8 hours (If overnight soaking, rinse water every 8 hours to prevent bacteria growth)

Molding Options: Small spring Form, Tupperware or bowl

Blanched Almonds can replace soaked cashews 1 C. of Raw Soaked cashews for 1 C. of Blanched Almonds

Raw Rolled Oats can replace Raw Soaked Cashews: 1 C. of Raw Soaked cashews for 1/2 C. of Raw Oats
