Tuscan Sun-dried Protein Bowl

Ingredients


 

  • 1 pound of tofu, firm or extra firm, strained and diced

  • ¼ Cup Sun-Dried Tomatoes, soaked and chopped

  • ¼ Cup of water for soaking sun-dried tomatoes

  • 3 Roma Tomatoes, diced

  • ½ Cup Red Peppers, Chopped

  • 3 Tbsp. nutritional yeast (Nutty, cheesy taste)

  • 1 tsp. of Apple cider Vinegar and lemon juice

  • 1 Tbsp. garlic powder

  • 1 Tbsp. of red pepper flakes or 1 chili pepper diced

  • ¼ tsp. of Cracked pepper & salt

 

**Top with Sesame Seeds

  1. LARGE MIXING BOWL

  2. MIXING SPOON

  3. MEASURING CUPS/SPOONS

  4. CUTTING BOARD & CHEFS KNIFE

  5. STORAGE CONTAINER (EAT AS MADE FOR FRESHNESS)

     

Instruction

 

  1. Prep the sun-dried tomatoes by chopping into small pieces and soaking in water to fill for 5 minutes, allowing them to re-hydrate

  2. In a large mixing bowl add in the strained and diced tofu pieces.

  3. Add in all ingredients except the sun-dried tomatoes, Mix thoroughly

  4. After soaking, Add sun dried tomatoes to tofu mix and Mix thoroughly

  5. **optional: Serve on English muffins or your favorite toast.

 

Storage

 

Store in refrigerator in a sealed container for up to 48 hours.


 

Chef Notes

 

  1. Sun-dried tomatoes are dehydrated tomatoes and need to be soaked before use to ensure full flavor is release.  Review tips video on how to easily activate sun-dried tomatoes.

  2. Firm tofu contains the least amount of water and a higher protein content. Review Tips video on how to strain tofu easily.

  3. For Lunch: You can prepare this meal early morning and let sit sealed container and place in fridge for lunch time that day.
