Tofu Avocado Lime Scramble
This excellent breakfast recipe is fabulous for people who want a strong flavor with their coffee! Its Chalk full of vitamins and protein, and best of all, it will leave you satisfied for hours!
Prep/Cooking Time: 15 minutes
Serves: 2 Persons
Ingredients

Firm/Extra Firm Tofu: 8oz/1 Pound (Strained Tofu *see chefs notes)

Spinach: 1 Cup (Washed)
-
Avocado: 1/2 Medium Haas Avocado
-
Garlic: 2 Cloves or 1 Tbsp. of Garlic Powder
-
Roma/Vine Tomato: 1/4 Cup or 1/2 Medium Size
-
Coconut Oil Melted: 2 Tbsp. (Sub W/ Water)
-
Lime Juice: 1 tsp. (The Juice of 1/4 Lime)
-
Nutritional Yeast: 3 tsp.
-
Tumeric: 1/4 tsp. (Optional for coloring)
-
Kosher Salt and Black Pepper: Pinch

Cilantro for Garnish: Palm full

Cheesecloth or Fabric for Straining Tofu
Instructions

Start by straining your tofu. (Read below)
-
Cube the tofu and the tomatoes
-
Smash and dice the garlic
-
On medium heat add the oil and let pan heat.
-
Next, add all remaining ingredients except the spinach in the frying pan.

Sautee for 5 minutes then add the spinach to allow a light cook.
Garnish with Cilantro and Serve over toast or wrapped in rice paper for a breakfast burrito.
2 Ways Straining Tofu
Long Straining Option:
-
Put the Tofu between a kitchen towel or paper towels and place the tofu between 2 plates,
-
Afterward, add a heavy object (5 pounds) on the plates and let sit for 30-45 minutes.

This will allow all the water to drain, which will then allow the Tofu to absorb all of the curry spices.
Quick Straining Option:

Strain the Tofu with a cheesecloth but cutting the tofu into cubes
-
Next, wrap the tofu the cheesecloth and strain the water out with enough pressure to strain but not crumble the tofu.

Straining tofu: Quick Strain using cheesecloth. Extended Drain: cut into slices then place between two pieces of paper and plates, add a 5-pound weight and let sit for 4 hours
