Vegan (Oil-Free) Mayo

 

Cook Time: 10 minutes

Ingredients

 

  • 8 oz Tofu Or Half block (Silken, firm, extra firm)

  • ¼ tsp. of Garlic powder (1 clove)

  • 2 1/2 tsp. Yellow Mustard

  • 1/2 lemon squeezed

  • Pinch of Salt

  • ¼ tsp. Curry Spice (Optional)

  • Pinch of Turmeric (Optional)

 

 

Instructions

 

  1. Blend Tofu in a small food processor or Hand Blender in a Jar until a paste texture is formed.

  2. Add all other ingredients and blend thoroughly until a mayonnaise texture is achieved.

 

Storage

 

Store in the fridge in an airtight lid and jar for up to 2 weeks. 

 

Chef Notes

 

  1. The Softer the tofu (silken) the creamier the Mayo will be

  2. Add a tsp, of Hot sauce, Siracha sauce, or Harissa paste to make a spicy mayo.

  3. Add roasted garlic for added flavor.
