Mac 'n' Cheese Grilled Cheese Delight

Prep Time: 15 minutes

Cook Time: 10 minutes

Serving Size: 2

Ingredients:

  • 4 slices of sourdough bread

  • 1 cup macaroni and cheese (prepared)

  • 1/2 cup vegan cheddar cheese, shredded

  • 2 tbsp vegan butter

Instructions:

  1. Cook macaroni and cheese according to package instructions.

  2. Spread vegan butter on one side of each sourdough bread slice.

  3. On the unbuttered side of two slices, evenly layer vegan cheddar cheese.

  4. Spoon a generous amount of macaroni and cheese onto the cheese-covered slices.

  5. Top with the remaining slices, buttered side facing out.

  6. Place the sandwiches in a skillet over medium heat and cook until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.

  7. Once cooked, remove from heat, let them cool for a minute, and then slice in half.

Storage:

  • Best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 1 day.
