Seared Portabella Burger With a Creamy Guacamole  

 

I call this the "Queen of the Shrooms". What can be said about that majesty of mushrooms? The range of species says enough, they can be transformed into so many different food substitutions and this is why I have falling in love with the Portabella.  You'll always find her in our home.

 

Cook Time: 18-20 minutes  

Marinating Time: 10 minutes

Total Time: 30 minutes

Ingredients for Seared Mushrooms

 

  • 2-3 large Portabella caps

  • ¼ tsp. Cumin

  • ¼ tsp. Smoked Paprika

  • ¼ tsp. Black Pepper

  • 2 Tbsp. of Sweet Guacamole per burger (See Recipe in sauce area)

  • 1 Tbsp. per burger of Spicy Aioli (See Recipe in sauce area)

Ingredients for Marinade

  • ¼ C. Amino acids (Soy sauce)

  • ¼ C.Vinaigrette

  • ¼ C. Water

Tools

 

 

  • 10-12” Frying pan

  • Additional pan or  weight for pressing

  • Measuring cup & Spoons

  • Whisk & Tongs or spatula

  • 2 Medium bowl for mixing

 

Instruction For Mushrooms

 

  1. Wash & cut mushroom buttons/stems off for even cooking

  2. 1st Searing: Add the mushrooms to a fryer pan with olive oil on medium heat

  3. Place heavy pan weight on top of mushrooms and let cook for 3 minutes on both sides

  4. 2nd Searing: Add ¼ Tsp Cumin, Smoked Paprika, and Black pepper over mushrooms and place pan back on top of mushrooms and once again let cook for 2-3 minutes on both sides.

  5. Prepare marinade whilst 2nd searing is cooking

  6. Remove mushrooms from pan and place in marinade for 10 minutes

  7. Final Searing: After marinating, finally add back to frying pan on medium heat for 2-3 minutes on both sides.

  8. Let Portabella's cool for 3-5 minutes, top with our Creamy Guacamole and serve between two pieces of toast

 

Instruction For Marinading

 

  1. In a large bowl add ¼ C Amino acids (Soy sauce), ¼ C Vinaigrette & ¼ C Water

  2. Mix well and add Mushroom caps to marinate for 10 minutes after the 2nd searing above

 

 

Assembling Burgers

 

  • Add the sweet Guacamole to each bun

  • Add Mushrooms

  • Top with Aioli sauce and enjoy

 

 

Chef Notes

 

  1. Substitution for gluten bread: You can add these mushrooms to any type of bread you choose and they can also be added to lettuce wraps or tortillas.

  2. Olive oil can be replaced with water, you must keep in eye on them more if using water to prevent the mushrooms from burning
