Ingridents 

  • 4 shots of espresso (or 2 cups of brewed strong coffee)

  • 2 cups of pumpkin puree

  • 4 cups of non-dairy milk (e.g., almond, soy, oat)

  • 1/2 cup of maple syrup (adjust to taste)

  • 2 teaspoons of pumpkin pie spice

  • 1 teaspoon of vanilla extract

  • Vegan whipped cream

  • Pumpkin spice powder (for topping)

  • Cinnamon sticks (optional)

Tools

  • Blender Saucepan

  • Whisk

  • Espresso machine or coffee maker

  • Pitcher

  • Four 8 oz cups

Instructions

  • In a saucepan, combine the pumpkin puree, non-dairy milk, maple syrup, pumpkin pie spice, and vanilla extract. Heat over medium-low heat, whisking continuously until the mixture is heated through. Don't let it boil; just warm it.

  • Brew 4 shots of espresso using an espresso machine. Alternatively, if you don't have an espresso machine, brew 2 cups of strong coffee using your preferred method, such as a coffee maker or French press.

  • Pour the shots of espresso or brewed coffee into a blender.

  • Add the warm pumpkin mixture to the blender as well.

  • Blend everything together until smooth and frothy.

  • Transfer the creamy pumpkin spice latte to a pitcher.

  • When serving, pour the latte from the pitcher into 8 oz cups.

  • Top each cup with a generous dollop of vegan whipped cream.

  • Sprinkle a pinch of pumpkin spice powder over the whipped cream for that extra pop of flavor.

  • If you like, place cinnamon sticks in the cups for a touch of elegance and extra aroma.

Chefs Tips

  • Adjust the sweetness to your liking by adding more or less maple syrup.

  • For an iced version, allow the latte to cool and then refrigerate it. Serve over ice and top with whipped cream and a sprinkle of pumpkin spice.

  • If you prefer a creamier latte, you can use canned coconut milk for an indulgent twist.

  • Feel free to experiment with different non-dairy milk options for unique flavor profiles.
