Quick Chickpea "Tuna" Salad
Preparation/Cook Time: 20 minutes
Servings: 3 servings
Ingredients

1 (15 0z.) can of chickpeas, rinsed and drained

1/4 medium white onion

1/2 tablespoon of garlic powder
-
1/3 cup of vegan mayo
-
1 tsp. of lemon juice
-
1 tsp. of dried dill
-
1 /4 tsp. of sea salt
Garnish
-
1/2 chopped tomato
-
1 chopped scallions
*Serve on toasted whole wheat bread drizzled with olive oil and garlic powder.
Instructions

Add chickpeas and onions into the food processor, (or mash together in a bowl with a fork)

Pulse till the chickpeas and onions are thoroughly mixed. They should remain somewhat chunky, do not over pulse or you will end up with hummus!

Transfer the mixture into a bowl,

Add in the lemon juice, the dried dill, the salt, garlic powder, and the vegan mayo.

With a rubber spatula thoroughly mix in all ingredients. But be careful to not bruise the chickpeas.

Then with a spoon, transfer the finished mixture on to a slice of toasted whole wheat bread.

Drizzle with olive oil.

And garnish with fresh chopped tomatoes and scallions
