Quick Chickpea "Tuna" Salad 



Preparation/Cook Time: 20 minutes

Servings: 3 servings 




  • 1 (15 0z.) can of chickpeas, rinsed and drained

  • 1/4 medium white onion

  • 1/2 tablespoon of garlic powder 

  • 1/3 cup of vegan mayo 

  • 1 tsp. of lemon juice 

  • 1 tsp. of dried dill 

  • 1 /4 tsp. of sea salt 




  • 1/2 chopped tomato 

  • 1 chopped scallions 


*Serve on toasted whole wheat bread drizzled with olive oil and garlic powder. 




  1. Add chickpeas and onions into the food processor, (or mash together in a bowl with a fork)

  2. Pulse till the chickpeas and onions are thoroughly mixed. They should remain somewhat chunky, do not over pulse or you will end up with hummus! 

  3. Transfer the mixture into a bowl,

  4. Add in the lemon juice, the dried dill, the salt, garlic powder, and the vegan mayo.

  5. With a rubber spatula thoroughly mix in all ingredients. But be careful to not bruise the chickpeas.

  6. Then with a spoon, transfer the finished mixture on to a slice of toasted whole wheat bread.

  7. Drizzle with olive oil. 

  8. And garnish with fresh chopped tomatoes and scallions
