Ingredients:

- 4-5 Strips of The Vegan Gents Seitan (Follow "How To Make Seitan with The Vegan Gents" recipe before you get started or use store-bought seitan)

- Roasted green pepper, cut into 1/4" strips

- 1/2 Red sweet onion, cut into 1/4" strips

- 1/2 Cup of shredded vegan mozzarella cheese (optional)

- 1 teaspoon of olive oil

- 1 tsp. of sea salt
-
- 1/2 tsp. of dried oregano
-
- A pinch of red pepper flakes
-
- 1 tsp. garlic powder
Instructions:

1. Mix all the spices together in a small bowl to create a seasoning mixture.

2. Heat a skillet or fry pan and add a teaspoon of olive oil. Sauté the onions until they become translucent.

3. Reduce the heat to medium-low and add the seitan strips. Sprinkle a pinch of the seasoning mixture and sauté with the onions.

4. Add the roasted green peppers and sprinkle the seasoning mixture again. Let everything brown and become slightly crisp. Sprinkle with more seasonings.

5. Quickly add the vegan cheese to the skillet. Sauté until the cheese is melted, being careful not to let it burn.

6. Transfer the mixture to your preferred bread, such as focaccia.
